Mmmmm. A new Paleo delight. Crandall found it. A Pan de Higo Almendrado, from Spain. Translated as Fig Almond Cake. My kids said it was in no way a "cake", but that does not diminish it's deliciousness. It is basically mashed up figs pressed with whole almonds. The ingredients are: Pajarero Figs and Marcona Almonds. That is a good ingredient list.

and how do these two ingredients come together for cake? I want to make some!
ReplyDeleteWell, like my kid said, "This isn't cake". It really was like dried figs, maybe processed in a foodprocessor until they were a paste, and then mixed with some whole almonds pressed into a flat circle. It was kind of "raw" in the sense that it seemed like it was made for just ripping apart and savoring.
ReplyDeleteWas it more like bread? "Pan" means bread in Spanish...Marcona almonds are my favorite and if you get a chance to get them (Trader Joe's and Whole Foods have it), you should definitely indulge. :-)
